The Bikini Cocktail
Makes enough for 10 people
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine all the ingredients in a pan, heat until it reaches a gentle boil, agitating so the sugar melts. Next, remove from the burner and let it to cool fully. Transfer to a sterilised bottle, close it keeping it in the refrigerator, where it will keep for around one month.
To make Cocktail Base: Combine the specified liquid ingredients into one big jug, allow it to infuse for one hour, then filter it preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Pour 85ml of the batch mix into a mixing glass containing ice, gently stirring gently for a minute until cold. Filter to a cold coupe glass or equivalent, garnish with some cranberries and complete it using a brief mist of mandarin oil over the top.
